refactor: load colorschemes randomly
In Emacs, there is `seq-random-elt` which randomly selects an element from a sequence. We mimic it here in Neovim. Ref: https://www.gnu.org/software/emacs/manual/html_node/elisp/Sequence-Functions.html.
